Singaporean Garden Party – Gourmet Carousel

Bond over a delicious feast inspired by a garden party from Gourmet Carousel. The Rotisserie Hamper brings you a timeless combination of Slow-roasted Leg of Lamb, Oven-roasted Beef Loin, and your choice of Traditional Roast Turkey or the new Satay Turkey. An ode to Singapore’s food culture, this new recipe uses a marination of ginger, lemongrass and turmeric for 12 hours. Additional ginger juice is added as a natural tenderiser, and a layer of satay gravy applied before roasting. It’s served with ketupat, spiced chicken stuffing, sayur lodeh, and satay sauce.

What’s a party without dessert? Executive Pastry Chef Choo Eng Tat is putting his special twist on Yuletide classics. To tailor them to Singaporean preferences, he’s buttered up and added chocolate chips to the traditional Panettone, while his Festive Fruit Cake uses candied dried fruit soaked in orange juice before baking. Another must-try is the Berry Chocolate Cheese Log, which melds smoky burnt cheesecake and Valrhona chocolate crème with a hint of berries.

Korean-Style Celebration – Crowne Plaza Changi Airport

Annyeonghaseyo! Yes, the new star of the Christmas menu at Crowne Plaza Changi Airport this year is a Korean-style Roast Turkey. Brined in spiced water for 24 hours, the 6 kg turkey is then coated with a generous layer of Gochujang (Korean red chilli miso paste) sauce before it’s roasted in the oven. The tender and flavourful bird is served with Kimbap-stuffed turkey breast with kimchi fried rice and seasonal greens.

An upsized version of the Korean-style Rolled Turkey Breast with kimchi fried rice stuffing also features on the a la carte festive menu, as well as part of festive bundles. Just nice for four, the Bundle of Joy also comes with Bubur Cha Cha Log Cake, while the indulgent Season’s Special Bundle packs it with Black Pepper Iberico Pork Ribs, Cosy Cheese and Charcuterie Platter and Black Forest Tree Cake.

Cantonese Inspired Roasts – Mandarin Oriental Singapore

Ruling the roost over at Mandarin Oriental Singapore is the Chinese Style Roasted Christmas Goose. It comes with bread, apricot and chestnut stuffing, roasted Brussels sprouts and other seasonal vegetables, as well as plum sauce and gravy. And where you have roast goose, there should also be roast pork. That’s where the Oven-roasted Suckling Pig and Crackling Iberico Pork Loin come in – that crunch is real! Both come with roasted potatoes, braised red cabbage, and roasting jus.

Pair your festive roasts with decadent desserts. Choices include a vibrant Cherry and Earl Grey Chocolate Yule Log, a pristine acai berry-flavoured Snowy Mountain, and the Christmas Tree, a caramelised puff pastry layered with pistachio praline, pistachio mousseline, and pistachio almond sponge. The intricately decorated Homemade Gingerbread House will also take pride of place on your table.

The Signature Mala White Beehoon also sees no fewer than eight crawfish and slices of turkey for extra indulgence. And that’s not all.

The Flambé Honey-smoked Turkey Breast is the icing on the (log) cake, as sliced turkey breast is marinated in honey, ‘Huadiao’ wine and smoked oil for a day, then wok-fried and flambéed to create a mouthwatering treat.
